Garlic Cheese Spread


1  8 oz. jar Cheez Whiz  (room temperature)
1  8 oz. pkg. cream cheese  (room temperature)

1/4 Cup mayo (or less according to your taste)
            ******Personally I use 3 Tbs of mayo******...

Garlic Powder to taste (a  little  goes  a  long  way)

Blend ingredients together until smooth.
Store in refrigerator until ready to serve.

Strawberry Glaze

2 to 3 Cups strawberries

1 Cup water

1 1/2 T cornstarch

1/2 to 3/4 C sugar

Crush strawberries...... add water...... cook 2 minutes

add sugar..... mix water and cornstarch until smooth and stir into berry mixture..... bring to boil stirring constantly.... cook and stir until thick and clear... cool...   serve over your shortcake....

Shepherd's  Pie


Brown Beef and Onion 
(1 lb beef  1 med onion)
add 2 T flour 3/4 way through browning
3/4 cups beef broth
2 T ketchup
dash of garlic powder
dash of Worcestershire Sauce
add vegetables
(1 lb bag frozen mixed vegetables  - thawed)
    
 and simmer for 5 minutes
put into baking dish
prep potatoes -
     mix in 3/4 C sour cream and 1/4 C cheese
top meat
/ vegetables with potatoes

bake 375 for 18 minutes
top potatoes with cheese and bake 2 more minutes...

No Knead Bread

Option 1

2  Loaf Recipe....
32  oz  AP flour... 
personally I've started using all bread flour.....   
1   Tbs  salt
1-
1/4 Tbs  yeast
2-2/3   Cups lukewarm water.....

Mix ingredients.  Put in 6 qt. container and let sand for 2 hours...  Then refrigerate for at least 12 hours....  the longer you keep the dough the more it tastes like sour dough....  can be kept 7 to 9 days....
Bake in 450 oven for 30 - 35 minutes...

Blend ingredients... cover and let stand in refrigerator for 12+ hours...  Heat oven and Dutch Oven to 500 degrees...  Put dough in Dutch Oven, cover and bake for 30 minutes..

Remove lid and bake for 20 minutes more...

Fried Onion Ring Batter

1/2  cup all-purpose flour
1/4  cup cornstarch
2     tablespoons instant mashed potatoes
       big pinch of cayenne (optional)
1     cup cold club soda
2-3  cups breadcrumbs

Mix ingredients except breadcrumbs.... Let stand until thickened.

Dredge onion rings in mixture then dredge in bread crumbs.

Deep fry for 3-4 min.

4 Cups AP flour          1 1/8 Cup warm water

2 tsp olive oil      1 tsp Kosher salt
    
(may add more flour for right dough texture)

Combine ingredients... knead 10 to 12 min. Then let rise 1 to 1 1/2 hours... punch down and divide into the size you want...  can be stored in refrigerator up to three days...

Brush dough with olive oil...  add sauce and toppings of your choice...

Bake in 425 oven for 18 minutes...

Baked Smoked Ham

You want the internal Temp to reach 160 degrees.....  

Insert the thermometer and set to 148 degrees....

Cover with foil and bake in 350 oven till temp is

reached...  remove from oven...  The temp will rise to 160...

Let cool on rack.....  Remove foil and debone...  slice the meat...

Refrigerate left over's...

Sirloin  Tip  Roast

Bake roast in 325 degree oven....

You want the internal Temp to reach 140 degrees for Med rare.....  

Insert the thermometer and set to 142 degrees....

Put it on a rack in a shallow pan and do not cover or add water...

after temp is reached let cool on rack.....    slice thin.....

Refrigerate left over's...

Your roast is done when the temperature in the center of the roast reaches
120˚F to 125˚F for rare,
130˚F to 140˚F for medium rare,
145˚F to 150˚F for medium,
and 155˚F to 165˚F for well done.

Heather's Pound Cake

 

   3     Cups Sugar
   1/2  Lb. Butter
   1/2 Cup Crisco
   5    eggs
   3    Cups Cake Flour
   1     Cup Milk
   1     tsp. Vanilla Extract
   1/4  tsp. Salt
   1    tsp. Baking Powder  

Cream Butter, Crisco and Sugar
Add eggs one at a time beating after each addition
Add Vanilla
Mix baking powder with salt and flour.  Sift twice
Add flour alternately with milk, beating after each addition

 Bake 1 hour 15 minutes at 325 degrees...

I bake mine (hb) in a tube pan...

Lemon or Almond Sour Cream Pound Cake

       3 cups cake flour
       3 cups sugar
       2 sticks butter
       6 eggs
       1 cup sour cream
       1 tsp. Vanilla Extract
       1 tsp. Lemon Extract...  or Almond Extract
       1/2  tsp. soda
       1/4  tsp. of kosher salt

       Cream sugar and butter... add vanilla and lemon or almond flavors...

       add eggs 1 at a time... add soda, salt and then add some

       flour then some sour cream back and forth till all is blended well...

        pour into floured baking pans.... 325 oven for 1 1/2 hours...

        place a pan of water under the cake pan while baking cake....


            Lemon Glaze

     1 cup powdered sugar

     2  Tbs.  fresh lemon juice

     1/2  tsp.  vanilla extract

     1 tsp. grated lemon rind (optional)

This is 1/2 recipe.....  bake 325 for 1 hour.... 
I used  2 - 7 1/2 inch baking pans.....


If you use 1 regular size loaf pan bake 325 for 1 hour 10 minutes......

If time permits, marinate meat in Italian Dressing ...
Broil on 2nd rung of oven 7 min. one side 6 min. the other
Let it rest a few minutes then slice for a really good piece of beef
Note the high tech aluminum foil door prop to hold the oven door ajar...


More recipes as time allows or as taste demands.

Microwave a lemon for 20 seconds on high to get more juice.

Flank Steak Marinade

3/4  cup soy sauce
1/4  cup olive oil
3  Tbsp. Worcestershire sauce
2  Tbsp. lemon juice
2  Tbsp. honey or brown sugar
1   Tbsp. vinegar
3   cloves garlic, minced
2   tsp. black pepper

Marinade steak 6 - 8 hours before grilling....  or overnight....
I grill a 2 pound flank steak 5 minutes on each side....

1  cup mayonnaise

6  slices cooked bacon - crumbled

Gayle’s  Blueberry  Cobbler

Melt 1 stick of butter in baking dish.

Mix
1 cup self rising flour
1 cup sugar
1 cup of half & half. (or whole milk)
1 t  vanilla - optional

Pour over the butter.

Rinse 3 1/2 cups blue berries

Pour evenly over the other ingredients without mixing.
Bake in 350º degree oven for 35 - 40 minutes or until lightly browned.

Serve warm with real vanilla ice cream....

Apple Cobbler

Melt 1 stick of butter in baking dish.

Mix
1 cup self rising flour
1 cup sugar
1 cup of half & half. (or whole milk)
1 teaspoon of ground Cinnamon 

Pour over the butter.

Put 2 granny apples, cored, skinned and cut into bite size
pieces into the mixture.

Bake in 350º degree oven for 35 - 45 minutes or until lightly browned.

Serve warm with real vanilla ice cream....

Place Corned Beef on a rack in a pan... fat side up with a
little water in the bottom of pan and cover with aluminum foil.  Roast in

Cream of Potato and Onion Soup

                  3   baking potatoes                      1   large white onion

                  3   tablespoons flour                    3   tablespoons butter

                   2   cups scalded milk                  1   Tbs chopped parsley

                    potato water                              Salt and white pepper 
                    for consistency                           to taste      

Boil together the cut up potatoes and onions until tender. Drain.  Save some of the water.  Make a white sauce using the milk,  flour,  and butter and combine with the potato and onion pulp.  Add potato and onion water to achieve the consistency you want.   (Parsley optional).  (Tabasco Pepper Sauce optional).

Broccoli-Rice Casserole

              1 1/2  cups long grain rice            1 pkg. chopped broccoli

              1 cup chopped celery                 1 can mushroom soup

              1 med. white onion, minced        1   8-oz jar Cheese-Whiz

              1/2 stick butter                           1  T  mayonnaise
                                                    

            Cook the rice. Wilt celery and onion in the butter. Thaw broccoli.
            Mix all ingredients together and cover... bake 45 minutes at 350 degrees.
            Remove cover... top with shredded cheese....  bake another 3- 5 minutes...
            You may add baked chicken / deboned / chopped to this recipe.... sometimes I do.....

Salisbury Steaks

Ingredients:

1 1/2 pounds ground beef
2 envelopes dry Lipton Beefy Onion Soup Mix
1/4 cup dry bread crumbs
1/4 cup milk
1 egg, lightly beaten
2 tablespoons oil or shortening

____________________

4 1/2 tablespoons flour
4 cups water
1 can sliced mushrooms, (4.5 ounces)
1 TBS beef base..... for a more intense beef flavor

Preparation:

Gently but thoroughly mix beef, 1 envelope

of soup mix, crumbs, milk, and egg. Shape into

4 patties. Brown patties in skillet; When patties are lightly

browned remove from pan, pour off excess fat.

Combine the 4 cups water, the other envelope of onion

soup mix, flour and mushrooms; pour liquid into pan and bring

to simmer. Add back the patties and cover. Simmer for 20 minute

turning every 5 minutes.

*Add Mushrooms and other ingredients to 4 cup measuring cup
  and then fill with water to make the 4 cups.

Hungarian   Goulash

        2  T  flour                1 can Beef Bullion                1  t.  soy sauce

        1  cup celery, diced                      1/2  green bell pepper

        1  onion, chopped                        1  can mushroom soup

        1  can sliced mushrooms               1  + lbs. round steak cut into cubes

    Brown steak in 1 stick of butter*.  Add the flour and brown.  Mix all     ingredients together and slow cook on low till meat is tender.  About 1     and 1/2 or 2 hours.  Serve over egg noodles.

*  Be sure not to burn the butter while browning the steak.........

Pork Chop and Rice Casserole

           1 1/4 cups long grain rice           2 cans Beef Consomme soup
           1 medium onion, sliced             1 bell pepper, sliced
           6 or more pork chops to cover the baking dish

      Put the raw rice in a 9 x 13 baking dish and cover with the consomme       soup. Place the onion in rings over the rice followed by the sliced bell       pepper. Put the trimmed pork chops on top and cover the baking dish       with aluminum foil.  Bake in oven on 350 degrees for 1 hour.

Chicken - Rice - Green Bean Casserole

2 (14 1/2-ounce) cans of green beans, rinsed and drained
3 plus cups diced cooked chicken
1 medium onion diced then sauteed
1 (8-ounce) can chopped water chestnuts, drained
1 (4-ounce) can pimentos, drained
1 (10 3/4-ounce) can condensed cream of celery soup
1 cup mayonnaise
3/4 cup long-grain rice, cooked according to directions
1 cup grated sharp Cheddar Cheese
Pinch salt

Preheat oven to 350 degrees F.

Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake covered for 20 to 25 minutes or until bubbly.  Add cheese and cover till cheese is melted.

Hard  Boiled  Eggs

Without the green sulfur layer around the yellow...

Large eggs

Cover with cold water.  Bring to boil and boil for one minute.  Remove from heat, cover and let stand for 20 minutes.  Immediately after the twenty minutes, exchange the warm water with cold water.  The eggs are ready to peel in just a few minutes.  The yellow of the eggs should be a uniform yellow without a green sulfur layer around the yellow.

Mrs. Wilson's Sauce for Little Sausage or Meat Balls

  3     cups - ketchup
1/3    cup  -  red wine vinegar
1/3    cup  -  soy sauce
1/4    cup  -  brown sugar

Mix ingredients together and heat.
Add little sausage or pre cooked meat balls and heat - then eat.

hb adds to Mrs. Wilson's recipe 1 or 2 cans of canned / drained diced new potatoes depending on how many sausages or meat balls one begins with. Increase ingrediant proportions so that plenty of sauce coats all.

** WARNING **
if you make this white sauce at home - you'll never again
be satisfied with white sauce that you get when dinning out

Basic White Sauce

3 - table spoons real butter
3 - table spoons all purpose flour
2 - cups of  whole hot milk

Melt butter in saucepan, blend in flour and cook over moderate heat, stirring until
butter and flour foam together for 2 minutes without browning to cook the flour.

Remove from heat, when bubbling stops - whisk in hot milk.

Return to heat and bring to moderate boil, whisking all along.

Let cook slowly, stirring for 2 minutes: season to taste with salt and white pepper.
White pepper dissolves and black pepper doesn't.

_________________________________________________________________

for more white sauce, say - 3 cups whole milk - use 4 table spoons of real butter
and 4 table spoons of all purpose flour. Adjust these proportions up as needed.
The richer the better is the accepted international rule from 403 BC to now.

Ground Beef and Elbow Macaroni

1 lb ground beef                             2 tsp. salt
1 lge. onion, chopped                     1 tsp. pepper
2 cups elbow macaroni, cooked     1 can mushroom soup
1 cup ketchup                                1/4 lb. cheese, grated

Brown beef and onion.  Pour cooked macaroni over meat.
Add ketchup, salt and pepper; stir.  Add soup; mix thoroughly.
Top with cheese.  Put in 450 degree oven till cheese melts.

Shrimp
(if shrimp are not forbidden for you)
 Put shrimp in a pot of salted water with your favorite shrimp boil
seasoning and bring to a...  strong boil.   Reduce heat and cook
for a couple of minutes. When the shell is lose from the flesh the
the shrimp are done.  Peal shrimp and eat  "as is"  or with the     
sauce of your choice.

Remember the fact that it's illegal to eat boiled
shrimp without SALTINE crackers at hand.

a not so new way of roasting chickens.
getting the bird (s)  split correctly is the not so secret..... secret
don't even think of roasting a chicken any other way.....

take out the wish bone and the back bone
make a slit on each breast just under wings
make a slit through each knee joint
remove nubs at end of legs and wings
rub chicken with plenty of real butter
salt /pepper or whatever seasoning you want
broil breast side down - 15 minutes
flip over and bake at 350 for 1 hr. 20 min
never over or under cook chickens

Fried  Chicken
It's no secret.... begin with.... Fresh Whole Birds


 

Cheese  Cake
find a good bakery and buy a good cheese cake
**  enjoy  **

or
gather up....

2     (8 oz) pkgs. of softened cream cheese
1/2  cup sugar
1/2  teaspoon real vanilla
2     eggs
1     prepared graham cracker crumb pie crust ( 9 inches )

Mix cream cheese, sugar and vanilla with electric mixer on medium
speed until well blended.   Then add eggs; mix until blended. Pour into pie crust

Bake at 350 degrees for 40 minutes or until center is almost set. Cool.
Refrigerate 2 hours or overnight....

Macaroni  &  Cheese

4  cups of cooked elbow macaroni,              1/2  stick butter, cut into pieces
    drained    ( 1 - 8 oz. box )
3  cups+ of grated sharp cheddar cheese     
1/2  cup of sour cream
3  eggs - beaten                                        
1  cup of milk                                                     
1/2  teaspoon salt

Preheat oven to 350 degrees.  Cook macaroni*, drain, and mix with the grated cheese.
Combine all other ingredients.  Mix everything together and pour into greased casserole
dish - top with grated cheese and bake uncovered for 25 minutes. After baking do not
cover and let stand for 10 minutes before serving.  Cover and refrigerate any left over.


* Be sure to fully cook the noodles.

Turn the cold grits onto a plate / slice it / heat slices with plenty
of real butter in your microwave...  
enjoy
1 part grits.... 4 parts water...
bring water to boil with salt and butter or margarine...
add grits and slow boil 3 minutes stirring all the while..
lower heat.. cover and let cook 10 more minutes....

Fried  Pork Chop  Strips
that is...   if pork is not forbidden for you
 
Buy pork chops as usual.  Debone'em.  Cut'em into strips.  Salt, pepper and
lightly flour  'em.  Fry 4 to 5 minutes in Fry Daddy.  Note:  If you live in the Geechee
area around Savannah Georgia.... you already know that it's illegal to eat fried pork
strips without "Johnny Harris  Honey BBQ  Hot Wing Sauce."

Boston  Butt
 Cook your salt and peppered Boston Butt (fat side up) on a rack in a
 deep sided pan covered with aluminum foil for 3.5  hours at 350 degrees.
You want the internal temp to reach between 160-165 degrees. 
If using a thermometer set it at 150 degrees and when temp is
reached remove butt from oven... the temp will rise.  Let stand
for 30 min. or more before slicing or chopping.  It's just that
simple and the taste is nothing less than GREAT.....

Alton's Pot Roast

 chuck roast
 kosher salt to taste
 2 teaspoons cumin
 Peanut or Vegetable oil for browning the roast
 1 sweet chopped onion
 5 to 6 cloves garlic, smashed
 1 cup tomato juice
 1/3 cup balsamic vinegar
 1 cup cocktail olives, drained and broken
 1/2 cup dark raisins


Rub roast with salt and cumin.  Brown the roast in the oil and put it with the other ingredients. Cover the chef's pan and bake it in  275 degree oven for  2 1/2 hours.
Roast this way really is different from usual... and it's really good...
Next time I make this I'll take a better picture.....

Broccoli - Rice  Casserole

1 1/2 cups long grain rice     1 pkg frozen chopped broccoli  
1 cup chopped celery          1 can mushroom soup
1 med. onion minced           1  eight oz. jar Cheese-Whiz
1/2 stick butter             Sharp Cheddar Cheese for topping
1/2 cup half and half mixed with mushroom soup

Cook rice. Thaw broccoli. Wilt celery and onion in butter.
Mix everything together. Spray baking pan with Pam.
Put mixture in baking pan. Cover and bake at 350
degrees for 45 minutes. After baking top with shredded
sharp cheddar cheese.

Baked Potatoes
Rinse, scrub, dry, oil, wrap in foil and bake  350  for 1 1/2  hours

Asian Brown Sauce

1 cup of beef broth
1 tablespoon PLUS 1 teaspoon oyster sauce
1 teaspoon dark soy sauce (Tamari Sauce)
1/2 teaspoon sugar
1 tablespoon cornstarch

Mix all ingredients. Stir while heating to boiling so that sauce thickens.  Serve warm with roast pork and fried rice or roast beef and white rice.

Pork Tender Loin or Pork Loin

Marinate
1/4  Cup Soy Sauce
1/4  Cup Bourbon - or Apple Juice
2     Tbs. Brown Sugar
Marinate overnight.

Mustard Sauce for Loin
1/3  Cup Sour Cream
1/2  Cup Mayonnaise
1     T  dry mustard
1     T  minced white onion
1 1/2   T  white vinegar

Brown Loin in hot fry pan and then put in baking dish.  Bake uncovered in 450-475 degree oven 20 minutes for Tender Loin. For Pork Loin add up to 10 more minutes of baking time depending on size of loin. Remove loin and wrap in foil and let rest for 10 minutes minutes.
